I was in the mood for ‘dessert’, so I tried this sugar-free, dairy-free, vegan chocolate ‘pudding’ today.
1/2 C dates w/o seeds
3 ripe mashed avocados
3/4 C unsweetened cocoa powder
1/2 C water
Process dates and vanilla until smooth
Add avocados and cocoa powder, processing until creamy, scraping down sides to thoroughly mix
Add water and process until smooth
NOTES: I found this to be a little to rich with chocolate, a touch bitter and in need of sweetness. I added about 1/2 C more water. And, when I make this again, I will add about 4 more dates, and cut back the cocoa somewhat.
I served this over strawberries, blueberries and blackberries.
